Indian Relish

 
Ingredients -
2 Red Bell Peppers, chopped
1 Sweet Vidalia Onion, peeled and chopped
1 Cup White Wine Vinegar
1 Cup White Sugar
1 Tablespoon Crushed Red Pepper Flakes
 
Preparation:

1. Mix together the red bell peppers, onion, white wine vinegar, sugar and crushed red pepper flakes in a medium saucepan over medium heat.

2. Bring the mixture to a boil, and then reduce heat to simmer.

3. Stirring occasionally, cook for 30 minutes, or until it has thickened.

4. Refrigerate overnight before serving.
