Chipotle Pork Chop Bites With Peach Salsa

Pork bites with peach salsa dipping salsa. Pork chops basted with chipotle sauce, grilled and served warm with spicy peach salsa.
Ingredients -

2 tablespoons Light Brown Sugar
1 teaspoon plus 1 tablespoon Fresh Lime Juice
2 teaspoons Chipotle Chiles, minced
3/4 teaspoon Salt
4 6-ounce Pork Chops
2 cups chopped Peaches
3 Scallions, minced
1 Jalapeno, seeded and minced
1 tablespoon chopped Fresh Cilantro

 
Preparation:

1. Preheat grill to high heat.

2. In small bowl, combine light brown sugar, 1-teaspoon fresh lime juice, and chipotle chilies.

3. Season pork chops with ½ teaspoon salt.

4. Grill chops 4 minutes, turn, and grill 4 minutes. Baste with chipotle mixture during last minute of cooking.

5. In a small bowl combine 1-tablespoon fresh lime juice, ¼ teaspoon salt, chopped peaches, minced jalapeno's, minced scallions, and chopped fresh cilantro.

6. Chop pork chops into bite size pieces. Press toothpicks into pork pieces. Serve with peach salsa.

YOu can substitute a milder or hotter pepper for the jalapeno, depending on heat preference.
